Part of the TUI Travel Group, SkiBound is a tour operator which has been specialising in school and adult group travel for over 28 years. As well as our locally run hotels, SkiBound operate ClubHotels that are exclusive properties run by English speaking staff.
Our ClubHotels offer a relaxed and social atmosphere to ensure that groups receive a friendly, fun, value for money holiday. The ClubHotels are situated in various resorts across the French Alps. All our resorts offer something different, from traditional French charm to lively and well established.
The purpose of this role is to ensure the profitable day to day operation of the kitchen to company standards.
What we are looking for
· British/European passport
· UK/Irish bank account, and Tax or National Insurance number
· Previous experience in working in an industrial Kitchen and high volume catering
· A flair for food presentation
· Excellent organisational and interpersonal skills
· Team player
· Flexible and enthusiastic approach
· Previous experience of working in a ski resort
· Management experience within a kitchen
· Knowledge of local language
· Ski/Snowboard experience desirable
To provide all meals (breakfast, lunch, dinner and bar snacks) in accordance with company guidelines ensuring high standards of preparation, presentation and quality of food.
To provide for special dietary requirements according to the needs of your guests.
To work front of house’ in the restaurant serving on buffets, breakfasts and other occasions as required.
To ensure meals are provided within the confines of a budget set by the Company.
Maximise food revenue by providing items for sale through the bar and offering speciality evenings in the restaurant.
To establish food requirements and order all foodstuffs, through the hotel manager, avoiding surpluses and shortages of products.
To train/coach and provide guidance for your team and to be responsible along with the hotel manager for managing their performance.
To provide a balanced menu for staff each day.
To establish an effective goods received procedure and to ensure goods are stored and rotated in the proper way in accordance with HACCP regulations.
To take food samples of all high-risk food in accordance with HACCP
regulations.
To maintain and monitor the daily HACCP records.
To ensure the highest levels of kitchen hygiene and cleanliness according to European and local regulations by implementing and undertaking a daily kitchen cleaning schedule.
Accurate completion of kitchen stock controls as required
