The Malvina House Hotel is Stanley’s premier hotel currently with 35 bedrooms and doubling by the end of the year, with a 130 cover restaurant and lounge bar. Further development includes plans to extend the kitchen, add a cinema, additional dining facility and continual upgrading of our existing bedrooms/public areas.
We are recruiting for an enthusiastic, passionate hands on Sous Chef to assist our Executive Chef in the day to day operation and take full responsibility of the main restaurant kitchen serving high-volume, fresh food.
You will have full responsibility for the kitchen during the Executive Chefs absence. Be able to run functions, bar, themed, snack foods, pack lunches/meal packs along with the regular lunch/dinner menus. You need to be able to cook a variety of dishes from fine dining to pub classics with an insertion of ethnic & international cuisine.
5 years’ experience with strong back ground of working in 4-5 star hotels, fine dining experience would be advantageous.
Well organised, works well under pressure, calm approach and sense of humour.
Must be able to work with fresh local ingredients as well as internationally sourced.
Must be involved in preparation and service.
Ability to take great pride in providing consistent quality dishes.
Contribute to the menus, demonstrating creativity/innovation to produce imaginative dishes within the restrictions of products available.
Must have strong communication and motivational skills to lead an effective international team of 10 chefs/cooks/kitchen porters with different backgrounds and culinary abilities.
Stock/stores control and labour costs.
Liaising directly with the mangers regarding all operational matters and customers when required.
Self-motivated, ability to develop the products and services to exploit revenue streams in line with the hotels growth and development.
Food hygiene certificate and ability to confirm to food hygiene standards and safe working practices.
