Job Title: Head Chef
Reporting to: General Manager
Responsible for:
1. The cooking and service of food according to the restaurant’s quality and service standards, by the chefs, cooks, apprentices and kitchen hands;
2. Organizing and making the kitchen roster;
3. Training of kitchen staff;
4. Ordering, receiving and storage of food;
5. Safety and cleanliness of all kitchen and food storage areas;
6. Creating a harmonious environment amongst all staff within the restaurant, especially the kitchen;
7. Food costs meeting and exceeding agreed targets;
8. Menu and operational planning.
Main activities:
1. Organise the production of high quality food according to menu guidelines;
2. Supervise all members of the kitchen team according to staffing guidelines;
3. Ensure good communication between floor staff and kitchen as well as within the kitchen;
4. Ensure that supplies and deliveries are properly ordered;
5. Ensure that supplies and deliveries are received and accounted for;
6. Undertake regular stock takes;
7. Maintain restaurant cost control systems;
8. Achieve food cost figures according to agreed standards;
9. Train and supervise all kitchen staff, including any apprentices and trainees;
10. Support the front of house supervisor in the management of the dining room;
11. Ensure that the kitchen staff follow hygienic food handling practices;
12. Organise and implement regular cleaning and waste disposal;
13. Organise and implement safe work practices;
14. Maintain kitchen equipment;
15. Report regularly on the above activities to the general manager;
16. Plan and implement menu changes in consultation with the manager;
17. Any other duties as required from time to time.
Special requirements/tools/equipment/clothing:
Uniform provided to be laundered by you and clean every day. Checkered trousers (small check) and jacket with white buttons only.
Clean-shaven every day (male), hair tied back if long and groomed.
Other features of job – shifts/night work/ availability/working conditions etc:
Available for work on each Saturday and Sunday and as advised by roster. Able to work until at least 2am if required.
