Job position: Executive Chef (Consultant)
Cuisine: Mediterranian, Continental and Local (Balkan) Cuisine
Location: City of Tirana, Albania

Main scope of the function: An Executive Chef is required to provide support and consultancy on all food production including all items produced for restaurants, catering, business lunch, delivery and/or other outlets. Consultation on reviewing all current menu items and on developing new menu items, raw material purchase specifications and standardized receipts. Consultation on maintaining the highest professional food quality and hygiene standards throughout the operations.

Main duties and responsabilities: The Consultant may be based abroad, with frequent travels to Tirana and will be engaged with the following tasks:

1. Advises on new techniques and standarts of food production, ensuring the highest possible quality standards and achivement of economical, technicaly correct and within budget costs of production targets;
2. Analyses all current menu items and based on this analysis provides feedback on possible improvements and changes;
3. Analyses current local market trends and competition and based on this analysis, provides guidance on introducing new menu items, developes standard menu receiptes and techniques for food preparation and presentation which helps to assure consistently high quality;
4. Review all current traditional menu items and reccomends improvements and changes to current items as well as advises on introduction of new traditional menu items;
5. Advises on implementation of measures to minimaze food costs, excercise protion control for all items served and raw material storing and processing;
6. Desings and advises an a profesisonal training programme for all kitchen staff;
7. Continues support and cosultation to the comany CEO on food processing, menu items and other issues related to the kitchen;

The ideal candidate will have:
– University degree in Culinary Arts, other professional training on the specific field would be an advantage;
– More than 10 years of overall professional experience in culinary arts;
– Strong experience and knowledge of Mediterranean and Continental cuisine, knowledge of local (Balkan) cuisine would be highly desirable;
– High level of competency in the food industry;
– Proven ability to work with different cultures and in an unfamiliar environment;
– Strong management and interpersonal skills;
– Excellent communication skills in English and/or Italian language;
