UK / Amhuinnsuidhe Castle
Senior chef de partie/second chef required for a Castle kitchen in the Western Isles Amhuinnsuidhe Castle is one of Scotland’s premier sporting estates. We are now looking to recruit a Second chef for the 2012 summer season. The castle enjoys the highest reputation for its standard of accommodation and hospitality, catering for an appreciative clientele.
The job requires a hard working individual with an interest in food, the successful applicant will work under the supervision of the head chef, duties to include but not exhaustive:
• Preparation and cooking of meals for guest, to include breakfast, picnic style lunches, afternoon teas, and four course evening meals.
• To assist in ensuring a high level of health and safety, cleanliness and food hygiene and to ensure that safe working practices are followed.
• Assist in stock taking and storage of stock, including checking deliveries
• Covering the chef on their day off, running the kitchen and supervision of kitchen staff
• Completing daily kitchen checks using the safer food, better business system
• Driving licence is preferable but not essential, some delivery pick-ups required due to location
Professional Cookery NVQ Level 2 and food hygiene Certificate desirable but not essential.
In house food hygiene, and health and safety training will be provided.

The season runs from approximately mid May to early November and hours 40-50 hours per week. This is a unique opportunity to work in one of the most unspoilt and beautiful locations in the UK. Ideally you should also have experience of living and working in a remote area and understand what this involves.
