THE HOTELS:

Fazenda Catuçaba is a true rural idyll situated amongst the rolling hills in the countryside 30 minutes from the historical town of São Luiz do Paraitinga, 1 ½ hours from Pousada Picinguaba and 2 ½ hours from São Paulo. The property’s 450 hectares (1,100 acres) include an operational organic farm, rivers, lakes and expansive views from the mountaintops.

Pousada Picinguaba overlooks a peaceful bay at the heart of the Natural Park of Serra do Mar, the tropical coastal forest running between Rio and São Paulo, about half an hour’s drive south of Paraty. It is the only charming hotel in a 30km radius. It faces the sea and a 3 km-long protected sandy beach. The hotel offers 10 comfortable rooms all opening onto the natural surroundings and the sea, including a dream honeymoon suite with en-suite jacuzzi and a breathtaking view of the ocean. The local road stops at the beach and one has to walk the last 250m to the hotel, nestled in the forest. Everything here is attuned to the spirit of the place, with nothing to disturb nature’s magic: no TV or telephone in the rooms, no Internet, no air-conditioning. THE JOB :

His job will be to reinvent the menu, proposing improvement in the menu but also in the organisation of the kitchen. As one of the hotel has a organic farm the cook mission will also be to administrate and manage the food production for both restaurants.

His mission will also include working with the food and beverage manager, in order to follow and negotiate the use of fresh products and the purchases of food.

We would like to offer to our clients a menu with fresh products and recipes inspired from Brazilian culture. The volunteer should be able to create tasty and fresh meals by using our organic products. He will be working in both restaurants and will have to propose different menus for each one: a sea product oriented menu and a countryside product oriented.

Working with the two restaurants, the chef should be proactive, curious of new culture and creative. He will be working closely with Brazilian amateur cooks.

A good English is required, and Portuguese would be a plus, as well as French.

You will be working with other employees from different nationalities so knowledge of various languages can be useful.

Availability: immediately, for 6 months minimum.

Experience required: Must have managed or co-managed a restaurant with a similar product-focus concept.
