Mia Delicy are a young restaurant with a passion for fresh food. We deliver a high quality dining experience and outstanding value for money. As a deli/bistro we are passionate about creating our own products in house and highlighting those components with dishes from around the world. From our own bacons and other cured products to pickles, chutneys, breads and more we are making a name for ourselves and are positioned for real growth in the years to come.
This position would suit a young Sous Chef or experienced Chef De Partie wishing to take on more responsibility & work overseas.
Education
Recognised culinary apprenticeship and or a Diploma. (Additional courses and seminars are considered desirable).
Experience
Minimum of 5 years experience as an A la Carte Chef with additional responsibilities that include staff and resource management, menu costing, and inventory management. .
The ideal candidate will have a firm understanding of both classic and modernist techniques & experience in a fine dining environment.
Key Competencies
• Must have excellent communication skills in English
• Must be able to organize time effectively
• Must be able to compose and execute modern dishes with confidence and accuracy and communicate effectively with the team to standardise outputs.
• Must be familiar with Combination ovens, modern cooking
equipment.
• Must have experience with waste management and reduction.
• Must be able to run a kitchen section using own initiative
• Must be capable of executing A La Carte with confidence to a high standard.
• Must be able to cook during high pressure services
• Must be conversant with HACCP and be competent in its implementation across the work place.
• Excellent problem solving skills
• Must be able to inspire team spirit
• Must be able to work as part of a larger organization
